Method
Make the Sauce
- In a small bowl, mix together mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.
Prep the Shrimp
- Add shrimp to a bowl with buttermilk and toss to coat.
- Remove shrimp, letting excess buttermilk drip off, and coat thoroughly in cornstarch.
Air Fry
- Preheat air fryer to 350°F.
- Place shrimp in the basket in a single layer and spray lightly with olive oil.
- Air fry for 3–5 minutes per side, until golden and crispy.
Finish & Serve
- Transfer shrimp to a plate and drizzle with chili mayo. Top with chopped chives and serve immediately.
