Arugula Salsa Verde is a vibrant, herb-forward sauce that comes together in minutes. With peppery greens, fragrant mint, and an umami-rich base of fish sauce and vinegar, it’s the ultimate companion for grilled meats, roasted vegetables, or even spooned over eggs.

Ingredients
  

  • 2 cups arugula
  • 1 cup parsley
  • ½ cup mint
  • A few leaves marjoram
  • 2 cups olive oil
  • 2 tablespoon red wine vinegar
  • 2 tablespoon fish sauce
  • Kosher salt to taste

Equipment

  • Food processor
  • Silicone spatula
  • Measuring cups and spoons

Method
 

  1. Add arugula, parsley, mint, and marjoram to a food processor
  2. Pulse 2 to 3 times until coarsely chopped
  3. Add red wine vinegar and fish sauce
  4. Pulse a few more times to combine
  5. With the machine running, drizzle in olive oil until smooth
  6. Season to taste with additional vinegar, lemon juice, salt, or pepper if desired

Notes

Storage: Keeps in an airtight container in the fridge for about a week, the herbs will darken slightly but the flavor stays bright. Give it a stir before using since the oil separates as it sits.
