For seasoning, I always use Diamond Crystal kosher salt. If you use Morton, use half.
If it seizes and goes matte on you, it got cold, and it is not dead. Warm a tablespoon of cream or fresh reduction in a clean pan and whisk the seized sauce into it in a thin steady stream, the same way you would rescue a mayonnaise. What does not come back is a sauce that boiled, because the water is gone and the proteins are cooked.
A cup of sauce is enough for four plates of fish or a big pile of asparagus. Use the servings adjuster above if you want less.
It does not keep. Make it last, serve it immediately, and do not refrigerate it and try again tomorrow.
