Method
In a small dry frying pan over medium heat, toast sesame seeds until fragrant and lightly browned, about 3 minutes. Remove from heat and let cool.
Grate garlic into a small bowl using a microplane or fine grater.
Add dried thyme, dried oregano, toasted sesame seeds, lemon zest, sumac (if using), and olive oil.
Stir well to combine and season to taste with kosher salt.
Store in an airtight container in the refrigerator for up to 1 week.
