Ingredients
  

  • 1 avocado
  • Crème fraîche to taste
  • Flaky salt to taste
  • Caviar as much as your heart desires
  • Chives finely chopped for garnish

Equipment

  • Knife and cutting board

Method
 

  1. Heat a small pan over medium heat with olive oil until shimmering.
  2. Drizzle avocado with lemon juice and a pinch of salt.
  3. Place avocado face down in the pan and cook for 2 minutes until charred.
  4. Flip and cook for 1 more minute on the other side. Remove from heat.
  5. Plate the avocado and add crème fraîche to the center.
  6. Top with finely chopped chives and a spoonful of caviar.
  7. Finish with flaky salt and serve immediately.
