Combine Greek yogurt, dill, parsley, chives, lemon juice, lemon zest, grated garlic, olive oil, and salt in a bowl.
Stir until evenly combined.
Spoon herbed yogurt onto a plate.
Place crispy chicken thighs on top.
Dust with sumac.
Finish with flaky sea salt.
