Ingredients
  

Candied Walnuts
  • ½ cup Walnut halves or pieces or pecans
  • 2 tablespoon Granulated sugar
  • ½ tablespoon Butter
Assembly
  • 1-2 heads Endive ends trimmed and leaves separated
  • 2 tablespoon Bacon onion jam see previous post
  • 2 tablespoon Blue cheese crumbled
  • Aged balsamic vinegar for drizzling , optional

Equipment

  • Non-stick skillet
  • Parchment paper
  • Small spoon or offset spatula

Method
 

Make the Candied Walnuts
  1. Heat a non-stick skillet over medium. Add walnuts, sugar, and butter.
  2. Stir frequently for 5 minutes. Once the sugar starts melting, stir constantly until fully melted and walnuts are coated.
  3. Immediately transfer to parchment paper and separate the nuts while warm. Let cool.
Assemble the Endive Bites
  1. Place endive leaves on a serving tray.
  2. Add a small dollop of bacon onion jam to the base of each leaf.
  3. Add a crumb of blue cheese and top with a candied walnut.
Optional: Finish with a light drizzle of aged balsamic vinegar. Serve immediately.
