Method
Prepare the Batter and Crab
- Lightly season soft shell crabs with kosher salt.
- In a large mixing bowl, combine corn starch, all-purpose flour, baking soda, and salt.
- Slowly add sparkling water while gently stirring until batter reaches a thick pancake batter consistency — clumpy but cohesive. Do not overmix.
Fry the Crab
- Heat avocado oil in a medium pot or cast iron skillet over medium heat to 330°F.
- Dip each crab into the batter, ensuring full coating. Let excess drip off.
- Carefully add crab to hot oil. Cook, turning every minute, lightly basting with oil, until golden brown and crispy, about 6–8 minutes.
- Remove crab and transfer to a paper towel-lined plate. Immediately season with kosher salt.
To Plate
- Place fried soft shell crab on serving plates.
- Top with dollops of Golden Goat caviar.
- Finish with flaky sea salt and serve immediately.
