Inspired by the marinated feta from Gjusta, this version blends fresh herbs, citrus zest, and two kinds of oil for the perfect creamy, salty bite. Use it on toast, in salads, or straight from the jar.

Ingredients
  

  • 6 oz Feta cut into cubes
  • ½ cup Avocado oil
  • ½ cup Olive oil
  • 1 teaspoon Red pepper flakes
  • 1 tablespoon Parsley finely chopped
  • 1 teaspoon Thyme finely chopped
  • 1 tablespoon Dill finely chopped
  • ½ teaspoon Oregano
  • Lemon zest
  • Kosher salt
  • Freshly ground black pepper

Equipment

  • Airtight 2-cup glass jar or container
  • Microplane or zester
  • Measuring cups/spoons

Method
 

  1. Add cubed feta to a clean 2-cup airtight jar or container.
  2. Add parsley, thyme, dill, oregano, red pepper flakes, and lemon zest directly into the jar.
  3. Pour in avocado oil and olive oil until feta is fully submerged.
  4. Stir gently or seal and tip jar to distribute herbs.
  5. Season with kosher salt and black pepper to taste.
  6. Refrigerate at least 30 minutes to let flavors infuse (longer is better).
