Method
Preheat oven to 500°F.
In a bowl, whisk together miso, melted butter, and warm water until smooth.
Place onions cut-side down in a medium cast iron skillet. Pour the miso butter mixture over top.
Cover tightly with foil and roast for 25 minutes.
Remove foil, flip the onions, and check if pan needs a splash more water.
Roast uncovered for 20 minutes more, or until deeply golden and caramelized.
Transfer onions to a serving dish. Garnish with lemon zest and flaky salt. Serve warm.
