Ingredients
  

  • 1 bunch small radishes trimmed and cut into bite-size pieces
  • ½ tablespoon miso paste
  • 1 tablespoon butter
  • 1 tablespoon water
  • Kosher salt to taste
  • Flaky salt for finishing

Method
 

  1. Clean and trim radishes; cut into bite-sized pieces.
  2. In a small saucepan over medium-low heat, melt butter.
  3. Add miso and stir to combine thoroughly.
  4. Add water and cook until glaze is glossy and slightly reduced (about 1–2 minutes).
  5. Add radishes to the pan, season with kosher salt, and cook for 2–3 minutes, stirring frequently to coat evenly.
  6. Remove from heat and transfer to serving plate.
  7. Finish with a sprinkle of flaky salt and serve immediately.
