A bright, refreshing shrub built on ripe peaches, fresh ginger, sugar, and vinegar. Stir it into sparkling water or iced tea over ice.

Ingredients
  

Shrub Base
  • 2 cups Fresh peaches
  • 2 tablespoon fresh ginger grated
  • 1 cup Granulated sugar
  • 1 cup Apple cider vinegar

Equipment

  • Nonreactive mixing bowl
  • Measuring cups and spoons
  • Glass jar or bottle with lid
  • Fine Mesh Strainer

Method
 

Make the Shrub Base
  1. In a nonreactive bowl, combine chopped peaches, grated ginger, and sugar.
  2. Stir well, cover, and refrigerate for 24 hours, stirring once or twice, until syrup forms.
  3. Strain through a fine-mesh strainer into a clean jar, pressing solids to extract juice.
  4. Discard or repurpose solids. Stir in apple cider vinegar until fully combined.
Rest and Store
  1. Seal jar and refrigerate for 2–3 days to allow flavors to meld.
Serve
  1. Mix 1–2 tablespoon shrub into sparkling water or iced tea over ice.

Notes

Storage: seal in a jar and refrigerate for up to 1 month. Shake before using, since separation is natural.
