Ingredients
  

  • 1 cup coarse grit polenta
  • 3 cups water
  • Salt to taste
  • ¼ cup butter
  • ¼ cup cream
  • ¼ cup parmesan
  • ¼ cup olive oil

Method
 

Cook the Polenta
  1. Bring water to a boil. Remove from heat.
  2. Slowly whisk polenta into the water.
  3. Cover with lid and allow to sit for 30 minutes.
Finish and Adjust
  1. Stir in butter, cream, parmesan, and olive oil.
  2. Cook on low for 15 minutes, stirring often.
  3. Adjust consistency: cook longer if too thin, add water if too thick. Season to taste.
To Plate
  1. Spoon polenta into shallow bowls or onto a platter.
  2. Top with proteins or roasted vegetables as desired.

Notes

Storage: refrigerate in an airtight container for up to 3 days. Reheat gently with a splash of water or stock to loosen it back to creamy.
