Method
Roast the Sweet Potatoes
- Preheat oven to 425°F.
- Rub halved sweet potatoes with 1 tablespoon olive oil and season with kosher salt.
- Place cut side down on a parchment-lined sheet pan and roast 30–35 minutes, until very soft.
Make the Lime Salsa
- In a small bowl, combine remaining 3 tablespoon olive oil with basil, cilantro, garlic, lime zest, lime juice, and a pinch of salt. Stir to combine and let sit while potatoes finish roasting.
Mash and Finish
- Once potatoes are cool enough to handle, remove skins (save for chips if desired).
- Mash flesh in a bowl with salt and black pepper until smooth.
- Spoon into a serving dish and make soft divots across the surface. Spoon lime salsa evenly over top.
