Blender or food processor
Wooden spoon or spatula
Cast iron pan
Method
Grate kernels from corn into a blender and purée until smooth.
Heat cast iron pan over medium heat.
Add butter, then pour in puréed corn.
Stir constantly and cook 1–2 minutes until thickened and just set.
Notes
Storage: refrigerate in an airtight container for up to 2 days. Reheat gently in a pan with a splash of water or milk to loosen.
