Garlic Tahini Sauce

A creamy, garlicky tahini sauce with lemon, avocado, and a touch of vinegar. Great on roasted vegetables, grain bowls, or as a dip.

Ingredients
  

  • 4 tablespoon tahini
  • 2 teaspoon balsamic vinegar
  • ½ avocado
  • 2 teaspoon lemon juice
  • kosher salt to taste
  • 4-6 tbsp water adjust to desired consistency
  • sesame seeds to finish optional

Equipment

  • Medium mixing bowl
  • Knife and cutting board
  • Fork or masher (for avocado)
  • Measuring spoons
  • Whisk

Method
 

  1. Add 4 tablespoon tahini to a medium mixing bowl
  2. While whisking, slowly drizzle in 1–2 tablespoon water; keep whisking until mixture seizes up and thickens
  3. Continue adding water 1 tablespoon at a time, whisking between each addition, until sauce loosens to a thick, creamy texture (about 4–6 tablespoon total)
  4. Whisk in 2 teaspoon balsamic vinegar
  5. Add ½ avocado (diced or scooped) and mash into the tahini with a whisk or fork until smooth
  6. Season with kosher salt and lemon juice to taste
  7. Adjust thickness with a bit more water or tahini if needed
  8. Garnish with sesame seeds if using and serve

Notes

Storage: Because of the avocado, this one is best within 2-3 days. Store airtight in the fridge with plastic wrap pressed directly on the surface to slow browning, and stir before serving.
