Method
Cook the Pork Belly
- Preheat air fryer to 400°F.
- Add pork belly slices in a single layer and cook for 15 minutes, or until crispy.
- Transfer to a paper towel–lined plate. Once cooled slightly, chop into small bite-sized pieces.
Make the Guacamole
- In a mixing bowl, combine avocado, red onion, jalapeño, cilantro, lime juice, salt, black pepper, and a drizzle of olive oil.
- Mix gently until just combined. Adjust seasoning if needed.
To Plate
- Spoon guacamole into serving bowl.
- Top with crispy chopped pork belly.
- Garnish with extra cilantro, drizzle of EVOO, and a pinch of flaky salt.
