Creamy guacamole gets a rich, savory crunch from air-fried pork belly slices. Finished with olive oil and flaky salt, this twist on a party favorite is dangerously addictive.

Ingredients
  

  • 6 to 8 oz Pork belly sliced ¼ inch thick
  • 2 Avocados diced
  • ½ Red onion finely chopped
  • ½ to 1 Jalapeño finely chopped
  • 2 tablespoon Cilantro finely chopped
  • 1 Lime juiced
  • Salt to taste
  • Black pepper to taste
  • Drizzle Extra virgin olive oil
  • Flaky salt to finish

Method
 

Cook the Pork Belly
  1. Preheat air fryer to 400°F.
  2. Add pork belly slices in a single layer and cook for 15 minutes, or until crispy.
  3. Transfer to a paper towel–lined plate. Once cooled slightly, chop into small bite-sized pieces.
Make the Guacamole
  1. In a mixing bowl, combine avocado, red onion, jalapeño, cilantro, lime juice, salt, black pepper, and a drizzle of olive oil.
  2. Mix gently until just combined. Adjust seasoning if needed.
To Plate
  1. Spoon guacamole into serving bowl.
  2. Top with crispy chopped pork belly.
  3. Garnish with extra cilantro, drizzle of EVOO, and a pinch of flaky salt.
