Simple Apple Sauce

Apples, butter, and bay—simmered until spoon-soft, then blended into a smooth, subtly savory sauce. It’s as simple as it is elegant.

Ingredients
  

  • 4 Apples peeled, cored, and quartered
  • 1 stick Unsalted butter
  • 1 Bay leaf
  • 2 cups Water

Equipment

  • Medium saucepan with lid
  • Immersion blender or countertop blender

Method
 

Simmer
  1. Add apples, butter, bay leaf, and water to a medium pot.
  2. Bring to a gentle simmer over medium heat, then reduce to low.
  3. Cover and cook for 30–40 minutes, stirring occasionally, until apples are very soft and falling apart.
Blend
  1. Remove and discard the bay leaf.
  2. Use an immersion blender to puree until smooth. (If using a regular blender, let the mixture cool slightly before blending.)
Serve
  1. Serve warm or chilled. Try it with pork chops, yogurt, or just straight by the spoon.
