Ingredients
  

  • 1 lemon zested and juiced
  • 2 tablespoon dijon mustard
  • 4 tablespoon tarragon chopped
  • ¼ cup orange juice freshly squeezed, from about ½ orange, plus zest
  • 1 teaspoon honey
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • ½ cup olive oil

Equipment

  • Blender or immersion blender
  • Mixing bowl
  • Citrus Juicer
  • Microplane or fine grater
  • Measuring spoons and cups

Method
 

  1. Add orange juice, orange zest, lemon juice, lemon zest, dijon mustard, chopped tarragon, honey, salt, and pepper to a blender.
  2. Blend on low to combine. With the blender running, slowly stream in olive oil to emulsify.
  3. Taste and adjust seasoning as needed. Serve over fresh greens or store in the fridge for up to 1 week
