Tips and Tricks
- Season the top face only, once the beef is in the pan. Salt on the face touching the metal draws water out exactly where you need it dry.

How to Store Leftovers

Why is my beef steaming instead of browning?
Three things do it. The pan wanted to be hotter, so flick a drop of water at it and wait until it skitters across and vanishes. The pan was too small, so a pound of beef sits deeper than half an inch and floods. Or you broke it up too early, which is the most common one by a long way. Leave the slab alone until it lets go of the pan by itself.
Can I use freshly cooked rice?
Yes, and that is what the recipe is built on. Cook it first and keep it warm. Cold rice under a runny yolk gives you a cold bowl.
